Editorial Advisory Board (EAB)

The AHF Editorial Advisory Board (EAB) plays a vital role in supporting AHF’s self-op mission by providing insight and expertise to develop valuable publications for members, primarily S.O. Connected Magazine. Developing and publishing four issue annually, the EAB ensures each edition serves as a key resource, featuring timely articles aligned with industry trends and the full scope of the industry. By spotlighting member expertise, providing essential resources, and maintaining transparency, the EAB helps members stay informed and prepared for the evolving healthcare foodservice, senior dining, and hospitality landscape.

Tom has served 30+ years as FSD at three 400 plus bed Tertiary Care Hospitals and five years in specialty LTC. He is the 2025 chair of the Editorial Advisory Board for AHF and is Treasurer for his Philadelphia Chapter. He teaches Foodservice Systems Management to Seniors in Dietetics and co-authored the 2022 textbook: Foodservice Operations and Management: Concepts and Applications, for Jones and Bartlett Learning. He and wife Mary were honored with the 2023 AHF Lifetime Achievement Award.

Amy Lewis is the Director of Marketing & Business Development at Kitchens To Go by Mobile Modular, bringing extensive expertise in strategic marketing, business development, and consultative selling. Known for her ability to foster strong relationships and deliver customer-focused solutions, Amy has a proven track record of driving growth and innovation. A dedicated volunteer with AHF, she has served as conference co-chair and led the Editorial Advisory Board for many years, demonstrating her passion for advancing the self-operated healthcare foodservice and senior dining industry.

Doris Biddle, CDM, CFPP

Doris graduated from Purdue University with a Bachelor of Science Degree in Restaurant Hotel and Institutional Management. She is certified as a CDM and CFPP and has been a member of AHF for 11 years. Doris has been employed at Community Hospital Anderson for the past 25 years as the Food Service Director. This is Doris’ second year with the EAB and she is looking forward to the great publications the EAB will achieve in 2025.

Kaitlyn Greb, MHA, MBA, RD

Kaitlyn Greb is the Director of Food and Nutrition at Midland Memorial Hospital. She has 15 years of culinary experience, including 5 years with Disney Culinary Operations. She specializes in large-scale food production and food safety. Kaitlyn is passionate about changing the perception of hospital food and is dedicated to providing high-quality, nutritious, and flavorful meals that enhance the dining experience for both patients and staff.

Michael P. Salvatore, III, CEC

Mike Salvatore, CEC, is a James Beard and Perry Award-winning chef with nearly 40 years of culinary and hospitality expertise. As Senior Director at Ruck-Shockey Associates, Inc., Chef Salvatore specializes in operational transitions, procurement, and delivering innovative foodservice solutions that drive profitability and guest satisfaction. A former Executive Chef for Hyatt Hotels and Director of Culinary Resources for Sysco, he brings a wealth of experience in rebranding, team building, and implementing self-audit tools for healthcare systems, ensuring compliance with rigorous inspections at all levels.

Chris Hartney, MS, RDN, FAND

Christine Hartney is the Director of Clinical Nutrition Services at RUSH University Medical Center and RUSH Oak Park Hospital. Her expertise is in clinical nutrition care and nutrition regulations, menu development, food service system computer programs, and dietetics education. Christine previously served as the Chair for the Accreditation Council for Education in Nutrition and Dietetics (ACEND) in 2018. She is actively involved in several initiatives at RUSH around food insecurity, sustainability, and use of technology and informatics to streamline patient care.

Sheila Vo, MBA, RD

Sheila Vo, MBA, RD, LD holds a Bachelor’s Degree in Human Nutrition and Food from the University of Houston and a Master’s Degree in Business Administration from New York Institute of Technology. She is a professional member of the Academy of Nutrition and Dietetics. She has had career in Dietetics in many areas such as Clinical Nutrition, Food Service Management, Corporate Nutrition, and Bariatrics. She joined the MD Anderson Room Service team in 2019.

AHF welcomes article contributions from members, affiliates, and recognized content experts. We do not accept unsolicited content from outside entities.

Articles may be written by the following:

  • Operators* (active or retired)
  • Consultants
  • AHF Business partners** (active or retired)
  • AHF Sponsors**
  • Educators (must be AHF Members or content area experts)
  • Students (must be AHF members)

* Operators who are not AHF members cannot be employed by a contract management company. 

** AHF appreciates contributions from our business partners, many of whom contribute much of our content. However, in the spirit of fairness it is important that the articles are written as an informative piece rather than a marketing piece for a particular sponsor. This is necessary in order to provide all business partners and sponsors with equitable opportunities to contribute to AHF’s resource library and knowledge base.
